A SERIOUSLY COLOURFUL DETOX HALLOUMI SALAD TO START THE NEW YEAR WITH A BANG!

Eating a variety of colourful food provides vitamins, minerals, and antioxidants to nourish your body that can’t be replicated in a supplement.

Different coloured foods play different roles in the body. This little master piece on a plate tastes as good as it looks!

INGREDIENTS

• Halloumi (4 Slices)
• Cherry Tomatoes (Handful)
• Red Onion (1 Small)
• Orange (1 small)
• Rocket (Handful)
• Watercress (Handful)
• Pomegranate Seeds (Handful)
• Carrot (1 Medium)
• Dressing (Of your choice)

METHOD

Firstly, you will need to chop your cherry tomatoes, red onion and orange into small bitesize chunks. Once you have done this pop them to one side.

Then you will need to remove the peel from your carrot, once you have done this use a potato peeler to shave your carrot leaving you with wafer thin slices.

Next take your pre-prepared tomato, onion & orange mix and add to them watercress, rocket & carrot shavings. Pour over a generous helping of your favourite dressing onto the salad and set aside allowing the dressing to penetrate and enhance the flavours.

Now take your halloumi slices, cut approximately 1cm in thickness, and place them on a slightly oiled griddled pan. Cook your halloumi on both sides until they have a slightly charred and golden colour.

Return to your salad and place the halloumi on top, finish off with a handful of pomegranate seeds giving you a sharp burst of sweet flavour
